Salmon is packed with protein and Omega-3 fatty acids that are so important for heart and brain health. Omega-3s are not common in other foods, so salmon is great to incorporate into your diet every once in a while.
You can also use other types of fish for this dish, or if you don't love fish, you can substitute for chicken.

- 2 ⅔ cups Salmon fillet (skinned and ready to cook, roughly diced)
- 1 egg
- 1 Tbsp freshly chopped Dill
- 1 Tbsp Horseradish (from a jar)
- 1 ½ cups fresh, white breadcrumbs
- lemon juice
- 2 Tbsps vegetable oil
- 8 mini Sesame burger bun (sliced horizontally)
- ½ cup Mayonnaise ('light' if desired)
- 2 handfuls young Spinach
Preparation steps

Mince the salmon in a food chopper. Mix in the egg, dill and horseradish and add enough breadcrumbs to form a mixture that holds its shape. Season with salt, a dash of lemon juice and ground black pepper, and shape into 8 small burgers.

Coat the burgers in breadcrumbs and fry in a pan in hot oil on both sides for 2-3 minutes per side until golden brown.

Toast the buns if desired. Spread a little mayonnaise on the bottom half of the bun then arrange half the spinach on top. Place the burger on top of the spinach, spread with mayonnaise and top with the remaining spinach. Finish with the top half of the bun and serve held together with wooden skewers.
