- 800 grams small waxy potatoes
- coarse Sea salt
- 200 grams Cherry tomatoes
- 2 Red onions
- 350 grams Padrón peppers (or small green peppers)
- 6 Tbsps olive oil
- freshly ground peppers
- 1 Tbsp lemon juice
- 3 Tbsps white balsamic vinegar
- 1 garlic clove
- 1 pinch sugar
- 3 Tbsps Caper (from a jar)
- 2 Tbsps finely chopped parsley
Preparation steps

Rinse potatoes thoroughly and boil in salted water about 20 minutes. Drain and let cool.

Rinse and halve tomatoes. Peel onions and cut into wedges. Rinse Padrón peppers, drain and transfer to a bowl. Mix with 2 tablespoons olive oil.

Thread potatoes onto metal skewers.

Heat grill. Place Padrón peppers and potato skewers on grill and cook, turning, 4-5 minutes. Season with salt and pepper.

For the dressing: Whisk lemon juice with vinegar and remaining oil. Peel garlic and press through a garlic press into dressing. Season with sugar, salt, and pepper.
6.
Toss tomatoes, onions, capers, parsley, and Padrón peppers with dressing and divide among bowls. Place warm potato skewers on top of salads.
