Rinse and halve chile peppers, remove seeds and ribs, chop very finely. Rinse sage leaves, pat dry and chop finely.

Combine lemon juice with chile peppers, sage and olive oil in a bowl and mix well. Season well with pepper. Baste chicken pieces with marinade and refrigerate for about 1 1/2 hours. Turn over chicken once halfway through marinating.

Season meat with salt and spread together with half of marinade on a greased baking pan.

Bake in preheated oven at 200°C (approximately 400°F) for about 45 minutes or until crispy. Baste chicken with marinade occasionally. Remove chicken pieces from the oven and arrange on preheated plates, drizzle with cooking juices. Garnish with sage leaves and lemon wedges, serve.
