- 3 shallots
- 4 Tomatoes
- 0.1 gram Saffron
- 4 garlic cloves
- 2 Tbsps olive oil
- 24 shrimp (peeled, deveined, tails on)
- 1 chili pepper (red, chopped)
- 2 centiliters Cognac
- 2 Tbsps lemon juice
- salt
- peppers (freshly ground)
- 1 sprig mint
- Lemon wedge (for serving)

Preparation steps

Preheat oven to 200°C (approximately 400°F). Peel and finely chop the shallots. Blanch the tomatoes, let cool slightly, then peel, remove the seeds and finely dice. Soak the saffron in 3 tablespoons of water. Peel the garlic. Heat oil in a pan. Saute the garlic and shallots until translucent. Add shrimp and cook while stirring for about 1 minute.

Add the diced tomatoes, red chile pepper and saffron with soaking liquid. Bring to a boil, remove from heat and stir in the cognac. Season with lemon juice, salt and pepper. Pour into an ovenproof baking dish and bake for about 10 minutes. Rinse and shake dry the mint, then place on top of shrimp as a garnish. Serve with lemon wedges.
