- 1 slice lemons
- 4 skinless Salmon fillet
- 4 peppercorns
- salt
- 4 eggs
- Lettuce
- 1 large, round, rustic Loaf of bread
- 2 Tbsps Pesto
Preparation steps

Bring a shallow pan of water to a simmer. Put in the lemon slice, salmon, peppercorns and a pinch of salt. Cover and cook for 5-8 minutes until the salmon is cooked through. Drain the salmon on absorbent kitchen paper and leave to cool.

Bring a pan of water to a boil and carefully put in the eggs. Boil for 6 minutes. Remove from the pan and cool under cold running water. Peel off the shells and slice the eggs.

Cut off the top quarter of the loaf and remove most of the soft crumb filling from the centre. You won't need this.

Spread the peston onto the base of the loaf. Arrange a layer of lettuce leaves on top.

Slice the salmon and arrange on top of the lettuce. Add a layer of sliced egg. Repeat the layers, ending with lettuce.
6.
Replace the bread top and press down. Wrap tightly in foil, then place a heavy weight (e. g. a bag of sugar) on top and chill for at least 1 hour.
