- 4 red Bell pepper
- 4 yellow Bell pepper
- 2 green Bell pepper
- 3 Tbsps drained Caper
- ½ cup pitted green olives
- 2 Tbsps chopped, fresh parsley (plus leaves for garnish)
- ¼ cup extra virgin olive oil
- 2 garlic cloves (minced)
- 1 Tbsp white wine vinegar
- kosher salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Char bell peppers over gas flame or in broiler until blackened on all sides. Place in large bowl; cover tightly with plastic wrap and cool. Peel, seed, and stem peppers; and cut into 1-inch-wide strips.

Place peppers, capers, olives and parsley in a medium bowl. Add olive oil, garlic, and vinegar to bowl and toss to incorporate evenly. Season with salt and pepper.
3.
Top mixture onto toasts, garnish with parsley and serve at room temperature.
