1.
Dissolve the yeast in the water, mix with the flour and salt and knead to a dough. Knead well and put in a warm place to rise for about 1 hour.

Then knead the dough again on a floured surface, halve and form into balls and then into round flatbreads approximately 25 cm in diameter.

Place on a greased baking tray and lightly press a pattern into the top with your fingertips.

Mix the egg yolk, sugar, olive oil and 2 tbsp water and brush the flatbreads with the mixture. Sprinkle with sesame seeds and leave to rise for a further 15 minutes or so.
5.
Bake in an oven preheated to 220°C (200° fan) | 425F | gas 7 for 5 minutes. Fill a small cup with water, quickly open the oven door and pour the water onto the floor of the oven. Close the oven door again immediately.
6.
Cook the bread for a further 10-15 minutes until lightly browned. Take out and leave to cool.
