- 1 kilogram large potatoes
- 80 grams finely diced Smoked bacon
- 2 shallots
- 1 egg
- 200 grams Sauerkraut
- salt
- freshly ground peppers
- Nutmeg
- 1 tsp dried thyme
- Butterfat (for frying)
- 400 grams Smoked salmon (sliced)
- mint (to garnish)

Preparation steps
1.
Peel and coarsely grate potatoes.
2.
Peel and finely dice shallots.
3.
Mix sauerkraut with bacon, egg, shallots and potatoes. Season with salt, pepper, nutmeg and thyme.
4.
Form potato and sauerkraut mixture into rösti (large, flat pancakes), each about 10 cm (4 inches) in diameter. In batches, fry rösti in hot clarified butter until golden-brown. Keep warm.
5.
Serve rösti topped with smoked salmon slices and garnish with mint leaves.
