800 grams Roast turkey roll
100 grams Turkey ham
100 grams green Olives (pitted)
salt
freshly ground peppers
2 Tbsps olive oil
250 grams Cherry tomatoes
4 scallions
250 grams yellow Lentils (peeled)
1 tsp Curry powder
½ tsp ground Cumin
400 milliliters Chicken broth
2 sprigs rosemary
2 Tbsps Crème fraiche

Preparation steps

Preheat the oven to 180°C (350°F).

Rinse the turkey, pat dry and lay open. Top with the ham slices. Chop the olives and top with the ham. Roll the roast and tie with kitchen twine. Season with salt and pepper and cook in hot oil on all sides. Remove from pan and place in a deep baking tray. Pour in a little water and cook for about 30 minutes in the oven. Periodically turn and baste the roast. During the last approximately 10 minutes, put in the tomatoes.

Trim the scallions, rinse and cut into thin rings. Sauté the drippings briefly, sprinkle with curry powder and cumin, sweat briefly and deglaze with the broth. Put in the lentils and rosemary, and simmer quietly about 15 minutes, stirring occasionally. Stir in the crème fraîche and season with salt and pepper.

Remove the roast from the oven, remove the kitchen string, cut into slices and serve with tomatoes on the lentils.
