Fennel has an extraordinarily spicy aroma to offer and on top of that it is super healthy. The combination of folic acid and iron supports blood formation and various essential oils have the famous, beneficial effect on the stomach and intestines. The fat-soluble vitamin E provides protection for the blood vessels and can reduce the risk of cancer.

The fennel tastes great in itself, but with more ingredients it becomes a full meal and even more interesting in taste. Try the vegetables together with rhubarb as a delicious salad, for example. Or add other vegetables to the oven vegetables and serve with crumbled feta cheese and red lentils.

Preparation steps

1.

Preheat the oven to 180°C (approximately 350°F). Rinse and trim the fennel. Cut into quarters then place in a greased ovenproof dish.

2.

Rinse and dry the herbs, then sprinkle over the fennel. Season to taste with salt, and pepper, then drizzle with olive oil. Bake in the oven for 25-30 minutes. Remove from the oven and serve immediately.
