Ingredients

- 1 kilogram turkey breasts (rolled and tied by butcher)
- salt
- freshly ground peppers
- 4 Tbsps olive oil
- 4 Oranges
- 4 Tbsps honey
- 1 Napa cabbage
- 1 onion
- 1 Tbsp butter
- 1 Tbsp powdered sugar
- 100 milliliters Vegetable broth
- 4 Tbsps Orange marmalade
- Basil (for garnish)
Preparation steps
Preheat oven to 200°C (approximately 400°F).
Pat turkey dry and season with salt and pepper.
Sear on all sides in roasting pan. Place in oven and cook for about 15 minutes.
Peel 2 oranges and cut out each orange segments. Juice remaining oranges. Remove half of juice and mix with honey, salt and pepper.
Coat turkey breast with honey mixture and reduce heat to 180°C (approximately 350°F). Bake 20-25 minutes.
Rinse cabbage, trim and discard stalk and cut leaves into 1 cm (1/3 inch) wide strips. Peel onion and chop finely. Sweat cabbage in butter until translucent and sprinkle with powdered sugar. Let caramelize and add remaining orange juice. Mix cabbage and broth and cook 5-10 minutes. Add orange segments and marmalade and season with salt and pepper.
Remove turkey from oven and remove twine and cut into slices. Arrange turkey slices with cabbage. Garnish with basil. Serve with croquettes.
