95 ozs Sirloin steak (on the bone)
3 tsps all-purpose flour
salt
freshly ground Black pepper

Preparation steps

1.
Heat the oven to 240°C (220°C fan) 475°F gas 9

Put the meat in a roasting tin and rub the flour into the fat. Season with salt and pepper.

Roast for 20 minutes, then reduce the oven temperature to 190°C (170° fan) 375°F gas 5.
4.
Continue cooking for 15 minutes per 450 g|1 lb for rare, adding another 15 minutes for medium rare and another 30 minutes for well done. As the meat is cooking, baste with the juices from time to time.
5.
Allow the meat to stand in a warm place, loosely covered with foil, for at least 15 minutes before carving.
6.
Garnish with thyme.
