- 1 ⅕ kilograms Roasted pork loin
- salt
- freshly ground peppers
- 2 Tbsps vegetable oil
- 8 Figs
- 2 Red onions
- 2 garlic cloves
- 2 sprigs Sage
- 400 milliliters Beef broth

Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F).
2.
Rinse the meat, pat dry and tie with kitchen twine if necessary. Season with salt and pepper. Heat the oil in a roasting pan and sear.
Rinse the figs. Peel onions and cut into thin strips. Peel and mince the garlic.
3.
Add the onion, garlic, figs, broth and sage leaves to the roasting pan. Bake for 1 1/2 hours.

Preheat the broiler.
5.
Remove the meat from the roasting pan and place on a baking sheet. Drizzle with a little salt water and brown until crispy under the broiler, watching carefully.
6.
Remove the kitchen twine. Slice the roast and serve alongside the figs and onions.
