- 1 ⅕ kilograms Pork cutlet (bone-in)
- salt
- freshly ground peppers
- 2 Tbsps rosemary (chopped)
- 3 Tbsps olive oil
- 500 grams shallots
- 3 carrots
- 1 kilogram potatoes
- 250 milliliters Beef broth

Preparation steps
1.
Preheat the oven to 180°C (approximately 350°F).
Season the meat with salt and pepper and rub into the roast along with the rosemary. Pour the oil into a roasting pan and turn the meat to coat. Roast until the meat is cooked through, about 1 1/2 hours.

Peel the potatoes, shallots and carrots, cut into bite-sized pieces and scatter around the meat in the pan during the last 30 minutes of roasting.

Remove the meat and vegetables from the pan, wrap in foil and let rest. Pour the broth into the roasting pan to deglaze. Thicken as desired with cornstarch or flour.
4.
Carve the meat and arrange alongside the vegetables on warmed plates. Drizzle with the pan sauce and serve.
