- 1 Roasted Chicken (ready to cook, about 1400 grams or 3 pounds)
- 1 organic lemon (zested and juiced)
- salt
- freshly ground peppers
- 200 grams onions
- 4 Tbsps olive oil
- 2 Tbsps melted butter

Preparation steps
1.
Cut chicken into 8 parts, rub with lemon zest and sprinkle with lemon juice and season with salt and pepper. Place on a greased baking sheet.
Peel onions and cut into eighths or quarters. Add to baking sheet. Combine olive oil and butter and drizzle over chicken.
2.
Roast in a preheated oven at 200°C (approximately 390°F) for about 35 minutes.

Remove from oven and carve. Serve, as desired, in a clay pot on pickled grape leaves with blanched cherry tomatoes and black olives.
4.
Serve, as desired, with mashed potatoes.
