- 4 Tbsps olive oil
- 4 Chicken legs (thighs separated from drumsticks)
- 12 cloves garlic cloves (skins on)
- 2 red chili peppers (seeds removed and finely chopped)
- 2 lemons (washed and sliced)
- 4 sprigs thyme
- ½ cup Chicken broth

1 Baking sheet, 1 Cutting board, 1 Large knife, 1 Tablespoon, 1 Sieve, 1 Rolling pin, 1 Can opener, 1 Fine grater
Preparation steps

Heat oven to 180ºC (160º fan) 375ºF, gas 5.
2.
Heat the oil in a roasting pan on the hob and brown the chicken pieces on all sides.
3.
Add the garlic and chopped chile to the pan, coat with oil then tuck lemon slices in between the chicken pieces.
4.
Strip the leaves from the thyme sprigs and scatter over the chicken. Season with salt and pepper and pour over the broth.
5.
Cover with kitchen foil and roast in the oven for 30 - 40 minutes, basting from time to time, or until the chicken is cooked through.
