- 1 ½ kilograms Roast beef (trimmed)
- 2 rosemary
- 2 garlic cloves
- salt

- 2 Tbsps vegetable oil
- 50 grams black Olives
- 1 egg yolk
- 1 Tbsp hot Mustard
- 1 tsp Mustard seed
- 1 Tbsp breadcrumbs
Preparation steps

Preheat the oven to 140 ° C lower and upper heat Preheat.

Rinse roast and pat dry. Heat oil in a roasting pan and brown meat together with rosemary and peeled and pressed garlic, season with salt and pepper and remove from the pan. Chop olives. Whisk egg yolk with mustard, mustard seeds, olives and breadcrumbs to a paste and coat meat with the mixture.

Place into a roasting pan with rosemary and garlic and roast in preheated oven at 140°C (approximately 285°F) for about 40-50 minutes, depending on meat thickness and desired doneness (for pink inside, meat temperature should reach about 55°C (approximately 130°F)). Remove from oven and cover with aluminum foil, let rest for about 10 minutes.
