Ingredients

For the tuna
200 grams Tuna (canned)
1 ripe, white Peach
For the mayonnaise
2 egg yolks
1 Tbsp Mustard
100 milliliters neutral vegetable oil
1 Lime
1 bunch Chives
sugar
salt
peppers

1 Ciabatta (sliced)

Preparation steps

Before beginning preparation, ensure that all ingredients are the same temperature. Rinse the lime, pat dry, finely grate the zest and squeeze the juice. Mix the egg yolk with mustard and some salt until smooth. Whisk in the oil very slowly (otherwise the mayonnaise curdles) while beating constantly, until the mixture is thick and stiff. Add the remaining oil alternately with the lemon juice. Season with sugar, salt and pepper.

Drain the tuna and separate into small pieces. Blanch the peach briefly, peel, halve, remove the pit and puree, mix with the fish and stir together with the mayonnaise. Season to taste, pour into a bowl, mix with chopped chives and garnish with lime zest. Serve on ciabatta slices with cherry tomatoes.
