- 1 cup marzipan paste
- ⅓ cup soft butter
- 1 generous pinch salt
- ½ Vanilla bean (scraped out seeds)
- 7 egg yolks
- ½ cup Dried Plum
- ½ cup flour
- ⅓ cup cocoa powder
- 7 egg whites
- ⅔ cup caster sugar
- 1 ⅓ cups white Chocolate couverture (60-70% cocoa solids, chopped)

Preparation steps
1.
Knead together the marzipan paste, butter, salt and the seeds scraped out of the vanilla bean. Add the egg yolks and mix until foamy.
2.
Drain the plums, dice finely and mix in. Sieve the flour and cocoa powder.
3.
Beat the egg whites with the sugar until stiff, then fold into the mixture a few spoonfuls at a time.
4.
Sprinkle the flour and cocoa mixture over and carefully fold in. Butter a springform pan and sprinkle with breadcrumbs.
5.
Spoon the batter into the pan and smooth the top. Bake in an oven preheated to 180°C (160° fan) | 350F | gas 4 for 40-50 minutes (test to see if it is done by inserting a wooden cocktail stick). Turn out of the pan.
6.
Melt the couverture chocolate over a hot bain-marie, let cool until it is beginning to set, then spread thickly on the cake with a spatula.
7.
Let cool. Dust with cocoa powder when the chocolate has set.
