Rice Pudding with Apples
In a pot, combine rice, milk, lemon zest, 2 tablespoons sugar and vanilla sugar. Bring to a boil. Reduce heat to low, cover, and cook until rice is tender, about 35 minutes.
Peel, quarter and core 2 of the apples. Slice thinly. Toss apples with lemon juice, 1 tablespoon sugar and cinnamon. Let stand.
Ladle rice pudding into a serving dish. Top with a layer of apples, and then finish with the remaining rice pudding. Let cool until set, 2-3 hours. To serve, unmold pudding. Slice remaining apple and serve with pudding.
