125 grams shiitake mushrooms
100 grams Rice noodles
4 scallions
4 Tbsps vegetable oil
3 garlic cloves
1 red chili pepper
50 grams canned Bamboo shoots
2 Tbsps White vinegar
3 Tbsps Oyster sauce
1 tsp soy sauce
salt
peppers
½ bunch cilantro
2 Tbsps roasted Peanuts

Preparation steps

Clean mushrooms and chop. Rinse scallions and cut into small pieces. Rinse chile and cut into rings, drain bamboo shoots and cut into small pieces.

Prepare rice noodles according to package instructions.

Heat oil in a wok, peel garlic, press and stir-fry briefly. Add chile and scallions, followed by mushrooms and bamboo shoots. Stir-fry about 5 minutes. Drain the pasta well and add to wok. Mix vinegar with oyster sauce, and soy sauce. Season with salt and pepper and add to the pan. Cook briefly. Rinse cilantro leaves, shake dry and chop. To serve, place a portion of noodles on a plate. Sprinkle with peanuts and cilantro.
