- 110 grams Rice noodles
- 1 Tbsp soybean oil
- 2 Tbsps sliced scallions
- 2 Tbsps chopped Coriander
- 1 Tbsp chopped Peppermint leaf
- 225 grams cooked duck legs (thinly sliced)
- 8 cooked shrimp (peeled and deveined)
- 2 Tbsps fresh Lime juice
- 1 Tbsp fresh Orange juice
- salt
- Lime wedge (for garnish)

Preparation steps
1.
Cook rice noodles in plenty of salted boiling water until al dente. Drain, rinse with cold water, and set aside to drain and cool slightly.
2.
Mix together soybean oil, scallions, cilantro, mint, lime juice, orange juice, duck breast and shrimp. Allow to stand briefly, then pour over the warm noodles.
3.
Mix again and season with salt and a little lime juice, if desired. Serve garnished with lime wedges.
