- ⅛ l Whipped cream
- 1 Vanilla bean
- 125 grams short grain rice
- 3 Tbsps Maple syrup
- 1 egg yolk
- 150 grams Plum
- 150 grams Grape
- Basil
- cinnamon ( for sprinkling)

Preparation steps
1.
Combine milk, cream and halved vanilla bean and bring to a boil. Add 1 tablespoon of maple syrup and simmer, covered, on low heat for 1 hour, stirring occasionally.

Add beaten egg yolk to rice, mix well and cool. Halve and pit plums. Rinse grapes, halve, remove seeds and bring all fruit with remaining syrup and 2 tablespoons of water to a boil.
3.
Cool compote. With 2 tablespoons, take rice and place on plates, drizzle compote around rice balls and serve sprinkled with cinnamon and garnished with basil.
