- ⅛ cup butter
- 1 onion (chopped)
- 1.333 cups Risotto
- 5 ozs Broccoli (cut into small florets)
- 3 cups hot vegetable stock
- ½ cup Cheddar cheese (grated)
- ½ cup white breadcrumbs
Preparation steps

Heat oven to 200C(180C in a fan oven) 400F, gas 6.

Heat the butter in a flame proof casserole and add the onion and cook for 3-4 minutes until softened but not browned.

Tip in the rice and mix well until coated. Add the broccoli and the hot stock, then give the rice a quick stir.

Cover with a tightly fitting lid and bake for 15 minutes until just cooked.
5.
Stir in the cheese and sprinkle with the breadcrumbs. Return to the oven for a few minutes until crumb topping is golden.
