- 6 ½ cups stewing Beef (cubed)
- 3 Tbsps vegetable oil
- 1 onion (peeled and sliced)
- 1 Tbsp plain flour
- 1 ⅔ cups Red wine (preferably Burgundy)
- 2 cloves garlic cloves (sliced)
- 1 sprig thyme
- 1 bay leaf
- 12 Pearl onion (or button onions)
- 1 ½ cups smoked Bacon (diced)
- 2 ½ cups Chestnut mushroom
- salt
- peppers

Preparation steps
1.
Preheat the oven to 140°C| 275F | gas 1.

Sear the beef in 1 tbsp oil in a casserole until brown all over. Remove with a slotted spoon.
3.
Add the onion and cook until beginning to brown, then return the meat to the pan. Stir in the flour and soak up the juices, then pour in the wine. Add the garlic and herbs, season, cover with a lid and cook for 2 hours.
4.
Meanwhile fry the onions and bacon in a little oil, then add, with the mushrooms to the casserole and cook for 1 more hour.
5.
Adjust the seasoning and serve.
