½ cup butter
¾ cup caster sugar
1 cup all-purpose flour
½ tsp Almond extract
½ cup chopped Candied cherry

Preparation steps

1.
Heat the oven to 150°C (130° fan) 300°F gas 2. Line 3 large baking trays with non-stick baking paper.

Beat the butter and sugar in a mixing bowl until light and fluffy.
3.
Stir in the flour, almond extract and cherries.
4.
Drop heaped teaspoons of the mixture, well apart on the baking trays and flatten slightly. Bake for about 25 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
