100 grams Red Currants
270 grams powdered sugar
4 egg whites
2 tsps lemon juice
200 grams ground almonds (peeled)
Red Food coloring (as needed)
200 grams red Red currant jelly

Preparation steps

1.

Rinse the berries, pat dry, remove stems and puree. Pour through a fine sieve and stir in 2 tablespoons of powdered sugar.

Beat the egg whites with the lemon juice until stiff, then gradually add the remaining powdered sugar until a hard, shiny meringue has formed. Fold in the almonds and berry puree, and stir in a few drops of food coloring until the desired color is reached.

Preheat the oven to 150°C (approximately 300°F). Line a baking sheet with parchment paper. Pour the cream into a pastry bag with a large round tip. Pipe small 2cm (approximately 3/4 inch) circles onto the baking sheet and bake in the preheated oven for 25 minutes with the door propped slightly open. Remove from the oven and allow to cool.

Heat the jelly slightly and stir until smooth. Spread the jelly over half the cookies and place the other half on top to form sandwiches. Arrange on plates and serve.
