- 1 head Red cabbage (about 1 kg)
- 2 shallots
- 250 grams tart Apple
- 2 Tbsps butter
- 1 Tbsp sugar
- 5 Tbsps White vinegar
- 300 milliliters dry Red wine
- 350 milliliters Vegetable broth
- 2 allspice
- 1 bay leaf
- 200 grams button Mushroom
- 2 Tbsps Canola oil
- 2 Tbsps lemon juice
- salt
- freshly ground peppers

Preparation steps

Rinse and quarter cabbage, remove core and cut into strips. Peel shallots and chop finely. Rinse, peel and core apples and dice finely. In a large saucepan, sauté shallots in 2 tablespoons butter until soft. Stir apples and sugar into pan and caramelize briefly. Add cabbage to pan and cook until softened, stirring often. Deglaze pan with white wine, red wine and broth. Add allspice and bayleaf to pan and simmer, covered, about 45 minutes. Remove bay leaf and season with salt and pepper.

Rinse and halve mushrooms. Sauté mushrooms in oil until browned on all sides. Deglaze pan with lemon juice and season with salt and pepper. Serve cabbage in bowls topped with mushrooms.
