Red Berry Mini Flans
To make the pastry, rub the butter into the flour and add just enough cold water to bind.
Chill for 30 minutes.
Preheat the oven to 200°C (180 fan) | 400°F | gas 6.
Roll out the pastry on a floured surface and use it to line 6 tartlet cases, re-rolling the trimmings as necessary. Arrange the strawberry slices in the pastry cases.
Whisk the custard ingredients together in a jug and three quarter fill the pastry cases.
Bake the tarts for 15 - 20 minutes or until the custard has set and the pastry is cooked.
