500 grams mixed Berry (such as black currants, bilberries, raspberries and strawberries)
1 Tbsp cornstarch
100 milliliters red Currant juice
100 milliliters Cabbage
2 Tbsps sugar
½ Vanilla bean
1 organic Orange
½ Cinnamon stick

Preparation steps

1.

Rinse the berries, wipe dry, and remove any stems carefully. Drain the berries on papaer towels. If using the strawberries, rinse thoroughly. Trim and halve or cut into quarters depending on the size. 

2.

Mix the cornstarch with 3-4 tablespoons of currant juice. Add the remaining currant juice, cherry juice, and sugar to a pot. Slit the vanilla pod lengthwise, scrape out the seeds, and place both into the pot. Rinse the orange in hot water and pat dry. Peel one strip from the orange with a vegetable peeler. Remove the whole fruit segments. Add the fruit segments, orange zest, and cinnamon to the juice.

Bring the mixture to a boil. Add the cornstarch mixture to a boil. Reduce the heat to low, and simmer for 2 minutes.

Pass the thickened cooking liquid through a fine strainer into a large bowl. Add the berries, and stir gently until combined. 

5.

Place the mixture into dessert bowls or glasses, and serve cold. 

6.

Serve the compote with something like a custard, if you'd like.
