Ravioli with Meat Filling
Ingredients
- For the dough
- 300 grams Pastry flour
- 1 egg
- ½ tsp salt
- For the filling
- 300 grams Roast drippings
- 1 onion
- 1 garlic clove
- 20 grams butter
- 2 egg yolks
- 1 egg
- 2 Tbsps chopped parsley
- 60 grams grated Parmesan
- salt
- freshly ground peppers
Preparation steps
For the dough, sift flour onto the work surface and make a well in the middle. Lightly beat eggs and add to well along with salt. Work in flour from the center outward, adding 3 - 4 tablespoons water as needed to form a smooth, pliable dough. Cover with a kitchen towel and let rest for 15 minutes.
Grind the beef in a food processor. Peel onion and garlic and cut into small cubes.
Heat butter in a pan and saute the onion and garlic until soft. Mix with ground meat.
Stir in yolks, egg, parsley and Parmesan and season with salt and pepper. Let soak for at least 30 minutes.
Roll dough out thinly and cut into squares (about 5 cm or approximately 2 inches).
Divide filling among half of the squares, leaving a border on each. Cover with the other squares and press down well around filling to seal. Bring salted water to a boil and cook the ravioli in portions for about 5 minutes. Remove with a slotted spoon and drain well. Serve with desired sauce.
