Quinoa Vegetable Salad

- 6 ozs Quinoa
- 1 onion
- Bell pepper (1 red and 1 yellow)
- 1 Cucumber
- 1 zucchini
- 3 ozs Olives
- 2 Tbsps parsley
- 1 garlic clove
- 3 Tbsps Orange juice
- 5 Tbsps lemon juice
- 5 Tbsps olive oil
- peppers (freshly ground)
Boil a pot of salted water and add quinoa. Reduce heat and cook quinoa for 15 minutes, drain.
Peel onion and cut into small cubes.
Rinse and halve peppers, remove seeds and ribs. Cut into 0.5-inch cubes.
Rinse cucumber and cut into slices.
Rinse and dry zucchini, cut into small pieces.
Combine prepared ingredients with chopped parsley, olive oil, and orange and lemon juices. Peel garlic and press through a garlic press, add to salad. Season with salt and pepper to taste, mix well. Serve.
