Quick Mini Pizzas with Ham and Vegetables
Ingredients
- For the dough
- 200 grams Pastry flour
- ½ packet Baking powder
- 50 milliliters Canola oil
- 75 milliliters water
- ½ tsp salt
- Pastry flour (to work)
- For topping
- 1 little yellow paprika
- 1 small Zucchini
- 2 medium sized Tomatoes
- 1 scoop Mozzarella
- 4 slices cooked ham
- 2 Tbsps Tomato paste
- freshly ground peppers
- ½ tsp dried oregano
Preparation steps
Preheat the oven to 200°C (approximately 390°F). Line a baking sheet with parchment paper. In a bowl, mix the flour and baking powder. Stir in the oil, water and salt and knead until smooth. Cover and set aside while you prepare the topping. For the topping: Rinse the pepper, cut in half lengthwise, remove seeds and white ribs and cut into thin strips. Rinse the summer squash and thinly slice.
Rinse and core the tomatoes and cut into small cubes. Cut the mozzarella and ham into small cubes . On a floured work surface, roll the dough to a 28 x 28 cm (approximately 11-inch) square and cut into 8 equal squares.
In a bowl, stir together the tomato paste, diced tomatoes and oregano and season with salt and pepper. Place the squares on the baking sheet and brush each with the tomato mixture top with the vegetables, ham and cheese. Bake on the middle rack of the oven until the dough is crisp and the cheese has melted, about 18 minutes.
