- 2 Tbsps vegetable oil
- 8 Flour tortillas
- 2 cups grated Cheese
- 4 scallions (finely sliced)
- 4 large Tomatoes (chopped)
- 2 Avocados (peeled, stones removed and flesh chopped)
- ½ Lettuce (shredded)
- 2 Tbsps chopped parsley
- To garnish
- Lime wedge

1 Pot, 1 Small bowl, 1 Measuring cups, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Wooden spoon, 1 Sieve, 1 Can opener, 1 Fork, 1 Bowl
Preparation steps
1.
Heat about 1 teaspoon of the oil in a large frying pan. Lay one of the flour tortillas in the pan and cook for about 2 minutes, turning from time to time. Remove the tortilla from the pan and keep warm. Repeat with three more toritillas.

Cook the fifth tortilla as above then turn the heat down a little and scatter over a quarter of the cheese.

Scatter over a quarter of each of the other ingredients, season with salt and pepper then carefully remove the tortilla from the pan. Lay one of the cooked tortillas on top to make a sandwich and cut into quarters.
4.
Repeat with the remaining tortillas and filling ingredients and serve garnished with the lime wedges and parsley.
