Due to its high potassium content, the Hokkaido pumpkin has a stimulating effect on kidney and bladder activity. At the same time, potassium has a gentle draining effect and balances the natural fluid balance.

For a vegetarian alternative, you can simply fry slices of smoked tofu crisply instead of bacon and deglaze with a little soy sauce.

25 grams butter
¾ l Vegetable broth
½ tsp Curry powder
½ tsp ground ginger
4 Tbsps Whipped cream
1 sherry
salt
freshly ground Black pepper
2 Tbsps honey

Preparation steps

For the soup, rinse the pumpkin. Remove the seeds and cut into cubes. Peel and finely dice the onion and apple. Heat the butter in a saucepan, and sauté both briefly. Add the pumpkin cubes, sauté briefly, then add the broth and simmer over low heat for 20 minutes. Add the sherry, sour cream, and spices, then puree with an immersion blender. Season to taste with salt, pepper, and honey.

Sauté the bacon until crispy in a pan with a small smount of oil.

Serve the soup in bowls, garnished with the bacon.
