- 4 Chicken breasts (skinned and cut into bite-size pieces)
- 2 Tbsps olive oil
- 1 tsp ground Cumin
- 1 tsp ground cilantro
- For the chutney
- 5 Peaches (or nectarines, halved and stoned)
- ½ Tbsp sugar
- 6 Tbsps extra virgin olive oil
- 5 Basil (finely chopped)
- 10 mint (finely chopped)
- ½ red chili pepper finely chopped (optional)

You could use plums in place of the peaches and add a star anise whilst simmering
Preparation steps
1.
Preheat the oven to 200°C (180 fan) | 400°F | gas 6.
2.
Toss the chicken cubes in the oil and spices then thread onto skewers.
3.
Cook in the oven on a baking sheet for 8-10 minutes or until the chicken is cooked through and juicy.
4.
Meanwhile, put the peaches in a pan with 6 tbsp water and the sugar. Simmer gently for 10-15 minutes until tender. Leave the peaches to cool, then remove the skins.
5.
Transfer the peaches and their syrup to a blender, add the rest of the chutney ingredients and blend until smooth. Serve with the hot chicken skewers.
