500 grams fresh Sauerkraut
2 bay leaves
2 tsps Juniper berries
¼ l Vegetable broth (from the jar)
1 tsp sugar
50 grams streaky Smoked bacon

Preparation steps

1.

Peel the potatoes and cook in salted water for about 25 minutes. Drain and let cool.

Press the potatoes through the ricer and mix with the flour, egg and egg yolk. Season with salt and pepper and leave the dough to rest.

Peel and halve the onions and cut into strips. Heat the butter in a saucepan and sauté the onions. Add the sauerkraut, bay leaves and juniper berries. Pour in the broth, cover and cook for about 30 minutes over low heat.

Form the potato dough into finger-like shapes about 8 cm long (approximately 3 inches). Place in a pot of boiling salted water for about 5 minutes. Remove with a slotted spoon and drain.

Season the sauerkraut with salt, pepper and sugar and remove the bay leaves.

Cut the bacon into short strips and place in a large pan. Add the potato pasta and fry on all sides.

Transfer the sauerkraut to plates and serve the bacon and potato pasta on top.
