- 600 grams potatoes
- 1 Fennel bulb
- 1 onion
- 250 grams white button Mushroom
- 4 Tbsps vegetable oil
- salt
- freshly ground peppers
- 1 Tbsp fennel seeds
- 4 eggs
- 12 Tbsps minced fennel fronds

Preparation steps

Peel, rinse and slice the potatoes. Rinse the fennel, halve, cut out the stalk and cut into strips. Peel and finely chop the onion. Rinse the mushrooms and cut into thin slices. Heat 2 tablespoons of oil in a pan and cook the potatoes for 5-7 minutes.

Add the fennel, onion and mushrooms. Cook for another 4-6 minutes. Season with salt, pepper and fennel seed. Heat the remaining oil in another pan and beat the eggs. Fry the eggs. Serve the potatoes with the fried egg and sprinkled with chopped fennel leaves.
