500 grams starchy potatoes

2 shallots
1 garlic clove
3 Tbsps olive oil
250 milliliters Vegetable broth
60 milliliters White vinegar
1 bay leaf
2 allspice
freshly ground peppers
500 grams skinless Salmon
½ bunch parsley
½ bunch Dill
1 tsp medium-hot Mustard

Preparation steps

Rinse the potatoes and cook for about 25 minutes in boiling salted water. Drain, let evaporate and peel while still hot. Peel the shallots and the garlic, finely chop and sweat in a pan in hot oil. Pour in the broth and vinegar, add the bay leaf and allspice and simmer for about 10 minutes over medium heat. Season with salt and pepper.

Rinse the salmon, pat dry and cut into thin strips. Rinse the herbs, pat dry and finely chop the leaves. Cut the potatoes into slices and mix with the hot broth, herbs, mustard and the salmon slices. Let stand 15-20 minutes, season with salt and pepper and serve on plates and garnished with dill.
