- 1 kilogram waxy potatoes
- 1 yellow Bell pepper
- 4 scallions
- ½ tsp Coriander
- 150 milliliters Vegetable broth
- 2 Tbsps white balsamic vinegar
- salt
- peppers
- 4 Tbsps olive oil
- 80 grams black Olives (de-pitted if desired)
- Daisy (to garnish)

Preparation steps
1.
Rinse the potatoes and steam for about 30 minutes. Allow to cool slightly, peel and cut into slices.
2.
Rinse the bell pepper, cut in half and then into small cubes. Rinse and trim the scallions and cut into rings. Crush the coriander in a mortar.
Boil the broth, along with the scallions, bell peppers and vinegar and season with salt and pepper.
Pour over the potatoes and leave to soak for about 10 minutes.
Mix in the oil and the olives and serve garnished with daisies.
