½ cube Yeast (20 grams or .7 ounces)
300 milliliters lukewarm milk
500 grams Pastry flour
2 White rolls (diced)
2 eggs
50 grams softened butter
salt
Nutmeg
2 onions
2 red Bell pepper
5 Tbsps olive oil
1 Smoked pork fillet (about 400 grams or 14 ounces)

Preparation steps

1.

Dissolve yeast in milk. Place flour in a bowl, add eggs, butter and bread cubes. Pour in yeast milk and knead into a smooth dough. Season with salt and nutmeg and let dough rise for 45 minutes.

Peel onions, cut in half lengthwise, then into strips. Rinse peppers cut into quarters, remove seeds and ribs and dice.

Heat 2 tablespoons olive oil in a pan. Add onions and peppers and cook briefly, then remove. Sear pork in the same pan.

Knead dough on a lightly floured surface and roll out to about 2 cm (approximately 3/ inch) thick. Top with onion and pepper mixture. Add pork and wrap dough around vegetables and meat. 

5.

Place pastry on a baking sheet lined with greased aluminum foil. Pinch ends to seal and wrap up in foil. Cook in boiling water for about 30 minutes, until done. Remove, unwrap, slice and serve with fresh salad, as desired.
