2 stale Bread roll
2 sour Apple (e. g. Boskop, peeled and grated)
½ unwaxed lemon (juiced, zest grated)
35 ozs Pork belly (with fat, ready to cook)
1 cup Meat stock
2 bay leaves
vegetable oil

In the last 30 min of cooking time you can add four whole apples to the roasting dish.

Preparation steps

1.
Heat the oven to 200°C (180°C in a fan oven), 400°F, gas 6.
2.
Soften the rolls in lukewarm water and drizzle the grated apple with lemon juice.
3.
Wring out the rolls and mix with the apples, lemon zest, salt and ground black pepper.

Season the meat with salt and ground black pepper and spread the bread mixture on top. Roll up along the long side and tie with kitchen twine. Season with salt and ground black pepper and fry in hot oil in a roasting dish on all sides. Deglaze with a little stock, add the bay leaves and transfer to the oven for around 60-70 min.
5.
Baste the meat occasionally with the stock and add more if necessary. Serve sliced.
