- 14 ozs Pappardelle noodles
- ¼ cup olive oil
- ⅔ cup Prosciutto (sliced finely into strips)
- 1 cup Asparagus (trimmed)
- 1 large carrot (peeled and julienned)
- 1 small Red pepper (seeded and julienned)
- ½ small Zucchini (julienned)
- salt

Preparation steps
1.
Cook the pasta in a large saucepan of boiling, salted water until 'al dente'; usually 8-10 minutes.
2.
Meanwhile, heat the olive oil in a large saucepan over a moderate heat and quickly saute the carrot, asparagus, carrot and courgette, stirring occasionally.
3.
Lower the heat and continue to cook for 3-4 minutes, adding the prosciutto at this point.
4.
Drain the pasta when ready and add to the other saucepan, tossing well to combine.
5.
Season to taste and serve immediately on plates.
