- 800 grams Pork belly (raw, smoked, skin on)
- 1 bay leaf
- 2 cloves
- ½ tsp peppercorns
- ½ tsp Juniper berries
- 400 grams Beans
- salt
- 1 onion
- 2 Tbsps butter
- 1 Tbsp Pastry flour
- 250 milliliters Beef broth
- 2 Tbsps Crème fraiche
- scallions (for garnish)

Preparation steps
1.
Rinse bacon and pat dry. Put meat in a pot and cover with water. Add bay leaf, cloves, peppercorns and juniper berries. Bring to a boil and simmer for 1 hour.

Blanch beans in salted water. Drain and let sit 6-8 minutes. Remove skins.
3.
Peel and mince onion. Heat butter in a pan, add onions and sprinkle with flour. Add broth and simmer for about 10 minutes until creamy. Stir in additional broth as needed. Remve from heat and add crème fraîche and beans. Season with salt and pepper.
4.
Remove meat from pot, cut off skin and thinly slice flesh. Add to bean mixture and serve sprinked with chives.
5.
Serve with mashed potatoes, as desired.
