2 scallions
2 garlic cloves (finely chopped)
1 tsp ginger (grated)
250 grams peeled shrimp (deveined)
250 grams soybean sprout
1 egg
salt
cayenne pepper
Vegetable broth (for poaching)
cilantro (for garnish)
soy sauce (or Hoisin sauce)

Preparation steps

Rinse the scallions, cut into halves lengthwise, and cut into very thin strips. Chop the bean sprouts and shrimps finely. Mix the scallions with sprouts, shrimp, ginger, garlic and egg in a bowl. Season with salt and cayenne pepper. Make about 20 balls from the shrimp mixture using wet hands.

Poach the shrimp balls for about 10 minutes in plenty vegetable stock (75-95°C hot) (approximately 165-200°F hot). Leave until done. Lift the balls with a skimmer from the broth and serve with soy or Hoisin sauce.
