- 2 fresh, thick Cod skinned (about 175 g | 6 oz)
- 2 tsps olive oil (plus extra for baking dish)
- 2 Tbsps lemon juice
- freshly ground Black pepper (to taste)
- ½ tsp White vinegar
- 2 large eggs
- 6 slices Parma ham
- fresh parsley (or herb of your choice)

Preparation steps
1.
Preheat oven to 400ºF / 200ºC. Brush the a baking dish with olive oil.
2.
Arrange fish in baking dish and drizzle with olive oil and lemon juice. Season to taste with pepper.

Bake for 10 minutes or until cooked through.

Meanwhile, prepare the eggs. Fill a small nonstick frying pan with cold water and bring to a gentle simmer. Add vinegar and carefully crack the eggs into the simmering water. Reduce heat to low; poach the eggs until just firm, spooning hot water over the eggs as they cook.
5.
Fry the Parma ham until crispy.
6.
Place a slice of ham on warmed plate. Top with fish, poached egg and remaining ham. Season with pepper and garnish with parsley sprigs. Serve.
