- For the dough
- 250 grams Pastry flour
- 20 grams fresh Yeast (1/2 cube)
- 100 milliliters lukewarm water
- 3 Tbsps olive oil
- salt
- For the topping
- 2 small Pear
- juice of lemons
- freshly ground pepper
- 200 Gorgonzola
- 3 Tbsps chopped Walnut
- Arugula

Preparation steps
1.
For the dough: Add flour, oil and salt in a bowl. Dissolve yeast in warm water, then pour into flour and process everything with the dough hook of an electric hand mixer into a smooth dough. Cover and let rest in a warm place for about 45 minutes.

For the topping: Rinse pears, cut into quarters lengthwise, remove cores and cut into slices, sprinkle with lemon juice.

Chop Gorgonzola cheese.

Put dough on a lightly floured surface, knead, roll around, place on a greased baking sheet and shape the edge a little thicker.
5.
Arrange pears on the dough, sprinkle cheese on top.
6.
Bake pizza in a preheated oven at 220°C (approximately 425°F) on lower rack for 20 minutes.
7.
To serve, season with pepper and sprinkle with arugula leaves and walnuts.
