Preparation steps

1.

For the dough, dissolve the yeast in 200 ml (approximately 3/4 cup) of lukewarm water. Mix the flour and salt in a bowl, make a well in the center. Add the yeast mixture and 4 to 5 tablespoons of olive oil and knead with hands until smooth. Add more lukewarm water or flour if necessary.

2.

Continue to knead the dough vigorously on a floured surface for about 10 minutes. Cover and let rise in a warm place for about 1 hour.

3.

Preheat the oven to 220°C (approximately 425°F).

4.

For the topping, drain the artichokes and slice. Slice the chorizo. Drain the olives and capers.

5.

Knead the dough again well, divide it into 4 equal portions and roll out thinly. Place on a parchment-lined baking sheet and brush with the sour cream. Sprinkle with artichokes, olives, capers, thyme, and sausage. Drizzle with a little olive oil. Season with salt and pepper. Bake in preheated oven for about 20 minutes.

6.

Remove from oven, sprinkle with freshly grated Parmesan and serve.
