Preparation steps

Add the basil, pine nuts and garlic to a mortar, and crush until combined. Gradually incorporate the cheese, and salt to taste. Mix in the oil, then season to taste with pepper.

Alternatively, you can puree the basil, pine nuts, and oil in a blender. Then you can gradually add the salt and cheese, and season to taste with pepper.

Store the pesto in the refrigerator and use quickly.
