1 bay leaf

100 milliliters dry white wine
3 Tbsps balsamic vinegar
40 grams Pearl barley

Preparation steps

1.

Cut cheese into pieces. Peel and finely chop garlic. Mix cheese with garlic and olive oil and season generously with salt and pepper.

Cut pumpkin flesh into cubes. In a saucepan, mix pumpkin with sugar, bay leaf, cloves, juniper berries, white wine, and vinegar. Simmer about 50 minutes over medium heat. After 20 minutes, stir in pearl barley.

Let cool slightly.

4.

Stir in Pecorino and garlic mixture.
